Lefse Day will be Sunday, Nov. 12

Ladies at Bethany Lutheran Church in Emmetsburg are preparing for the annual Scandinavian Tea to be held Wednesday, Nov. 29 at 1p.m.-3:30 p.m. Adults are $7.00 and children are $2.00. There is also a bake sale at the tea.

Most of the Scandinavian breads and sweets, that are served in a festive atmosphere by costumed waitresses the day of the tea, are made in homes.

However, each year a dozen or more women and men gather at the church to make the lefse which is one of the favorite traditional Scandinavian foods. Lefse will be made on Sunday afternoon, November 12, beginning at 1 p.m.

Over 20 batches of dough, consisting of flour, margarine, and hot milk, are mixed, kneaded and rolled into very thin round sheets. Old timers say one must keep rolling until light can be seen through them. The fragile sheets are carefully placed over a lefse stick and rolled onto a very hot griddle to be cooked. When the lefse is to be served, it is often crisp and is softened by dipping it in hot water and then covered until it is soft. Finally it is spread with butter and sugar, folded and cut into serving pieces.
