Go Hog Wild At Wild Rose Weekend BBQ

It’s time to go Hog Wild! Wild! Wild! The second annual barbecue competition is this weekend at Wild Rose Casino & Resort in Emmetsburg.

“The BBQ Competition is such an exciting event,” says Beth Thompson, Marketing Manager at Wild Rose. “Each team has different recipes and ideas for great barbecue. It is very interesting to see what the teams are using.”

The number of teams has grown from the first year with 25 competitors. This year, competition was limited to 45 teams and Wild Rose has reached that goal.

“We are very excited as we have teams coming from all over Iowa and Southern Minnesota,” said Thompson.

Barbecue teams will arrive Friday at the Wild Rose and can begin setting up their equipment in the afternoon. There is a Cooks Meeting that evening and they will be treated to a Cooks Breakfast Saturday morning at Emmet’s Grill Buffet.

Teams will participate in one of three areas: chicken, pork ribs, and pork butt/shoulder. This is a non-sanctioned event.

“We became members of the Iowa BBQ Society in 2007 and have hopes of becoming a KCBS (Kansas City Barbeque Society) sanctioned event in the future,” Thompson said. “In preparation of becoming sanctioned, we run our competition loosely based on KCBS rules.”

Each team has a chief cook and as many assistants as necessary. Teams can enter chicken, pork ribs and pork butt/shoulder. Wild Rose Casino &?Resort will provide all meat for this barbecue competition. Chicken and pork may be submitted for judging chopped, pulled, sliced or diced, as long as there is enough for the six judges to taste. Ribs must be submitted with bone in. Garnish and sauce are optional.

Judging is on taste, tenderness and appearance. Over $10,000 in cash prizes will be awarded. Prizes go to the Grand Champion ($3,000), the Reserve Grand Champion ($1,000), and to first through fifth places in each meat category.

The public will be allowed in the competition area from 10 a.m. to 4 p.m. For a nominal fee, the public can participate in barbecue tasting (all you can taste). The tasting is from 11:30 a.m. to 5 p.m.

During the day on Saturday there will be entertainment at the Wild Rose. From 11:30 a.m. to 1 p.m. enjoy ”The Fabulous Uniques,” followed by “The Scott Larson Band” from 1:30 to 3 p.m. and “The Split Second Band” from 3:30 to 5 p.m.

An Antique Car Show is from 12 noon to 5 p.m. on the Wild Rose grounds. Door prizes will be given.

The Hog Wild! Wild! Wild! Award Ceremony is at 5:30 p.m.

“Barbecue competitions are becoming very popular around the country and even the state of Iowa,” said Thompson. “In an effort to try and offer many different events for the people to enjoy, we thought that a BBQ Competition would be right up our alley. Since there aren’t that many competitions in this area, other than one that is offered annually in Mason City, we hope to continue our competition for years to come.”
