Wild Rose Is Going Hog Wild

Alert all barbecue cooks. Wild Rose is going Hog Wild-Wild-Wild!

Wild Rose Casino & Resort is hosting barbecue competition Aug. 29-30 with over $3000 in cash prizes. Deadline to pre-register at a discount is this Friday, Aug. 15, but registration will continue up to the day of the event.

Here’s what you need to know:

Each team will have one chief cook. The cook can have as many assistants as he/she finds necessary.

Wild Rose will provide the meat; pork ribs and pork butt. Each team will be assigned a cooking space at the Wild Rose RV Park where electricity is available. Other than that, cooks must bring their own equipment. Gas and electric grills are not permitted. Smokers and regular grills must be fired by wood, wood pellets or charcoal.

When the pork is cooked, each contestant must submit six portions of meat in a container; enough for six judges. Pork butt may be chopped, pulled, sliced or diced. Ribs must be bone-in. Wild Rose is a member of the Iowa Barbecue Society and the Hog Wild BBQ is a non-sanctioned event, loosely based on Kansas City Barbecue Society rules.

Registration is Friday, Aug. 29, from 5 to 8 p.m. A cook’s meeting begins at 8 p.m. During the evening, Mr. Tunes Mobile Music will be on site.

Cooks will have breakfast at Emmet’s Grill Buffet at 8 a.m. Saturday, Aug. 30. The public is invited to taste what the cooks have to offer. Public tasting is from 12 noon to 3 p.m.

A Wild Petting Zoo is open to the public from 12 noon to 3 p.m. on the Wild Rose grounds. The Split Second Band will be in concert from 12 noon to 3 p.m.

Barbecue judging is from 2 to 3 p.m. and the awards ceremony is at 4 p.m. Prizes will be awarded to the top five in each category. Champion and Reserve Champion will be named.
